Homemade Strawberry Pancakes Recipe

Homemade strawberry pancakes are one of my favorite ones. It doesn’t take a long time to make them and the result is always amazing. I have this recipe from my mother and she has it from her mother. I like strawberries a lot and that is why these pancake recipe is with addition of strawberries. But you can as well add any other fruit, chocolate chips, honey, cheese or any ingredient you like. It is really up to you what you will choose. You can also eat them without any extra ingredients.

To top the pancakes I used of course maple syrup, but I also like chocolate syrup with this pancakes. The other good idea is eating them with yogurt if you don’t like to eat a lot of calories at one time. When making the batter, remember that it is good to use two separate bowls and to have fresh ingredients. I am sure that thanks to this your pancakes will be tastier. To make these strawberry pancakes I used milk but you can use buttermilk instead of this or yogurt. Here is the recipe for delicious strawberry pancakes:

Ingredients:
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups milk
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 3 tablespoons butter, melted
  • 3 1/2 teaspoons baking powder
  • ½ cup strawberries
  • 1 teaspoon vanilla extract

How to make homemade strawberry pancakes:
  1. In one bowl, mix flour, salt, sugar and baking powder.
  2. In another bowl, mix egg, melted butter, milk and vanilla extract.
  3. Then, make a well in the centre of dry ingredients and pour wet ingredients into this well.
  4. Whisk wet ingredients and dry ingredients until combined, but don’t over mix the batter! It can have some lumps remaining. The will disappear during the cooking.
  5. Add strawberries.
  6. Heat a frying pan or a griddle over medium high heat and brush it with few drops of oil.
  7. When frying pan is hot enough, pour about ¼ cup of the batter on the surface of the frying pan.
  8. Cook pancake on one side for 2-3 minutes or until golden brown.
  9. Then flip and cook again for about 1-2 minutes or until golden brown.
  10. Serve warm and with desired topping.

Homemade Sweet Potato Pancakes Recipe

Looking for something tasty and easy to make? Why not trying these great sweet potato pancakes. It is always something new in the menu. Moreover, they are very easy to make and you do not need to buy a lot of expensive ingredients. Potato pancakes are good for snack, breakfast, lunch or dinner.

Potato pancakes go great with some meat and vegetables and that is why you can prepare them for a lunch or dinner when you know that your friends or family are coming to visit you. Usually people enjoy eating these pancakes and are very positively surprised with them. Try making your own sweet potato pancakes. I am sure that with these instructions you will be able to make them tasty and quick. To make sweet potato pancakes you will need only standard ingredients, which are potatoes, milk, flour, baking powder, eggs and some spices. Probably, you have all these ingredients in your kitchen. If not, you can buy them in every grocery store. Remember that it is always better to use fresh ingredients, specially milk, eggs and flour. The taste is better and you are always sure that pancakes will not have negative results on your stomach. Well, here is the recipe for sweet potato pancakes:

Ingredients:
  • 1 ½ cups milk
  • 1 ¾ cups flour
  • 2 or 3 large sweet potatoes
  • ¼ cups melted butter
  • 2 beaten eggs
  • ½ teaspoon nutmeg
  • 1 tablespoon baking powder
  • 1 tablespoon salt

How to make sweet potato pancakes:
  1. Peel sweet potatoes and cube them, put to boil for about 10 minutes until tender.
  2. Drain and mash potatoes with fork or in a food processor.
  3. Meanwhile, in a larger bowl, mix flour, soda, salt, nutmeg.
  4. In a separate bowl, mix milk, eggs, and melted butter. Add potatoes, but make sure that they are not hot.
  5. Add wet ingredients to the dry ingredients and whisk until combined, do not over mix the mixture.
  6. Heat a frying pan over medium high heat and brush it with few drops of oil or with butter.
  7. When frying pan is hot enough, drop large tablespoons of batter onto the frying pan.
  8. Cook potato pancakes on one side for about 2 minutes or until golden brown, then flip, and cook again for about 2 minutes or until golden brown.
  9. Serve pancakes warm with chicken, turkey, vegetables or sour cream. You can also top sweet potato pancakes with butter.

Homemade Pancakes Recipe #5 - Cornmeal Cranberry Pancakes

Here I will present a recipe for one of the most delicious homemade pancakes ever. Cranberry and cornmeal are a combination that is not only delicious but also very nutritious. These ingredients give you the chance to stay fit and to eat food you like the most. These homemade pancakes should be served at every breakfast! Homemade cornmeal and cranberry pancakes are not too sweet, and small chopped cranberries enliven each bite with a sour tang that is softened by maple syrup.
Homemade Cornmeal and Cranberry pancakes are excellent idea when you want to prepare something different for your family. They are not too heavy, but thanks to baking powder, they are fluffy and soft. Cornmeal gives your homemade pancakes some crunch and different taste.
For these homemade pancakes, I prefer using milk instead of buttermilk. I am not sure why but I think those with milk have better taste. Of course, it is only my personal point of view and if you are against using milk when preparing your homemade pancakes, you can make them with buttermilk.
If you are cooking pancakes for the first time, remember about preparing them in a proper way. By this, I mean that it is good if you know some few basic rules. Do not over mix the batter. It should have some lumps remaining and it is advised that you leave the batter to rest for few minutes before cooking it. Here is the recipe for these excellent homemade cornmeal and Cranberry pancakes:
Ingredients:
  • 2 cups flour
  • 4 large eggs
  • 2 cups milk
  • 1 ½ teaspoons salt
  • 2 tablespoons sugar
  • ½ cup yellow cornmeal
  • 2 tablespoons baking powder
  • 10 tablespoons butter cut into chunks, plus more for greasing pan
  • 1 ¼ cups chopped fresh cranberries
How to make Cornmeal Cranberry Pancakes:
  1. Take a saucepan and heat in it butter and milk until the butter melts. Set it aside for about 15 minutes.
  2. Take a bowl, and beat eggs in it, then stir in the milk mixture and mix until combined.
  3. In a separate bowl, mix together cornmeal, flour, baking powder, sugar and salt.
  4. Pour the egg mixture into the flour mixture and mix. Remember not to over mix, the batter should have some lumps remaining.
  5. Set the batter aside to rest for 5 minutes if you can.
  6. Add cranberries to the batter before cooking.
  7. Heat a frying pan or a griddle over medium-high heat and grease it lightly with oil or butter, then pour about ¼ cup of batter onto the frying pan.
  8. Cook on one side until bubbles break on the surface or for about 2-3 minutes. Flip and cook again for about1 minutes, or until golden brown. Serve warm and topped with maple syrup.

Homemade Pancakes Recipe #4 - Easy Pancake Recipe

This easy homemade pancake recipe proves that you can prepare your favorite food that tastes even better than the boxed one. I love homemade pancakes and I often make them for breakfast, dinner or just as a snack.

I added sugar to my pancakes, but if you want to make them more healthy, you can omit sugar. It will obviously be less sweet but it still tastes great. Once the pancake batter is in the pan, dot the surface of the pancakes with raspberries, blueberries, chocolate chips or sliced banana. It is a great way to get some fruits in your diet.

Ingredients:

  • 1 1/2 cups flour
  • 1 egg
  • 1 1/2 cups milk
  • 2 tablespoons sugar (optional)
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 - 3 tablespoons oil
  • 1 teaspoon Vanilla extract

How to make pancakes:
  1. In one bowl mix dry ingredients: flour, salt, baking powder and sugar. In a separate bowl mix eggs and milk, add Vanilla extract. Add dry mix to the wet mix and whisk until smooth. Don’t mix too long.
  2. Let the batter rest for 15 minutes.
  3. Heat a skillet on medium heat. Pour ¼ cup of batter into the frying pan. Cook on one side until the top begins to bubble, then flip over with spatula and cook for about 2 minutes or until golden brown.
  4. Serve warm and with desired syrup.

Tips:

Adding spices increases the aromatic quality of the homemade pancakes. I personally like to add some Cinnamon or Cardamom. If you want to try pancakes with new spices, start with ½ teaspoon. If you like it, add more.

If you want to freeze pancakes, cool and wrap them in aluminium foil or place them in a freezer bag. Store up to a month. To reheat, place them in a single layer on baking sheet and cover with foil. Heat pancakes for about 10 minutes at 350 degrees.

Homemade Pancakes Recipe #3 - Oatmeal Cookie Pancakes

Ingredients for delicious oatmeal cookie pancakes:

  • 1/2 cup old fashioned oats
  • 2 really ripe bananas, mashed up
  • 1/3 cup sour cream
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 ounces, 1/4 cup, chopped walnuts
  • 1/3 cup whole milk
  • 1/4 cup brown sugar
  • 1/3 cup raisins
  • 1/2 teaspoon vanilla extract
  • 1/4 stick butter, plus additional 2 tablespoons for buttering skillet
  • chocolate syrup for dressing.

How to make oatmeal cookie pancakes:

If you cannot find really ripe bananas, just put them in the microwave for about 15 seconds and they will become super soft when you want to mash them.
  1. In one bowl mix: oats, flour brown sugar, baking soda, cinnamon and chopped walnuts.
  2. In a another bowl, mix the wet ingredients: sour cream, whole milk, egg vanilla extract. Whisk the wet ingredients into the dry until just combined, then fold in the mashed up bananas and the raisins. Stir in the melted butter.
  3. Heat a griddle over medium heat and brush with additional melted butter. Cook pancakes, until bubbles form on the top, then turn. Cakes will cook in about 2 minutes on each side. Keep pancakes tented with foil as they come off the griddle to keep them hot. Serve with chocolate syrup or other one over the top. Enjoy!

Homemade Pancakes Recipe #2 - Buttermilk Pancakes

Buttermilk pancakes are my favorite breakfast pancakes. They are quite easy to make and when you try them there is now way back, you will want to eat them every morning.

Ingredients for buttermilk pancakes:
  • 2 cups buttermilk
  • Fresh raspberries, for garnish
  • 2 large eggs, at room temperature, separated
  • 1 1/2 cups unbleached all-purpose flour
  • 6 tablespoons unsalted butter, melted
  • 2 teaspoons baking soda
  • 3/4 teaspoon salt
  • Raspberry syrup
How to make buttermilk pancakes:
  1. Take a medium bowl, stir together the flour, baking soda and salt. Take a larger bowl and combine the buttermilk, butter and egg yolks.
  2. Take another medium bowl and beat the egg whites until stiff peaks form.
  3. Add the dry ingredients to the buttermilk mixture and stir just until combined. Use a rubber spatula and gently fold the beaten egg whites into the batter just until combined.
  4. Next, heat a lightly buttered griddle or cast-iron skillet. For each pancake, gently spread 1/4 cup of the batter on the hot surface to form a 4-inch circle.
  5. Cook over moderately low heat for about 2 minutes. Flip the pancakes and continue cooking until golden, about 1 minute longer.
  6. Put some fresh raspberries and serve with raspberry syrup. Enjoy!

Homemade Pancakes Recipe #1 - Delicious Chocolate Chip Pancakes

Here is the very first recipe for homemade pancakes that I posted here. I have to tell you that the reason I posted this recipe as first one is that I like Chocolate Chip Pancakes the best. If you enjoy eating chocolate chip cookies or muffins, you will definitely love these pancakes.

Ingredients for chocolate chip pancakes:
  • 1 cup milk
  • 1 ½ cups sifted flour
  • ¾ tsp. salt
  • 1 beaten egg
  • 1 cup chocolate chips
  • 3 tablespoons vegetable oil
  • 2 ½ tsp. baking powder
How to prepare chocolate chip pancakes:
  1. First sift and measure the flour and then add the salt and baking soda. It’s important to do it in the correct order so that you don’t use too much. Next sift or stir them together gently until it’s well combined.
  2. Take a separate bowl, combine the beaten egg, milk, and vegetable oil, then stir the ingredients together being careful not to over-beat the egg. Use a spoon and combine thoroughly.
  3. Now the next step - you will combine the wet and dry ingredients. Add the wet mixture slowly pouring it over top of the dry ingredients.
  4. Stir them together. Remember not to beat the mixture, just mix ingredients slightly until they are combined. Even if there are a few lumps, that is okay. You will avoid lumps by sifting the flour beforehand and mixing the wet ingredients. Avoid over-mixing because this will cause the pancakes to be tough.
  5. Use a wide pan or skillet on the stovetop. I use the griddle because I can cook more. Lightly grease the pan or griddle with vegetable oil.
  6. Turn the stove onto medium high or the griddle onto 350°. Remember to make sure it is hot enough before you add the batter.
  7. Pour the batter onto the pan. For basic pancakes, after pouring, they should measure about 4 to 5 inches in diameter.
  8. Check that the pancakes aren’t touching each other.
  9. Put chocolate chips over each pancake. Put about 10- 15 chocolate chips for each. You can put more if you like.
  10. Wait for about 2 to 5 minutes. Pancakes will start to bubble. When you notice that the bubbles are even throughout the pancake, use a spatula to carefully flip them over. Pancakes should be golden brown.
  11. Cook them on the griddle for 2 to 3 minutes until the pancake moves easily from the pan when you touch it.
  12. Serve it with butter and syrup.
