Homemade Pancakes Recipe #4 - Easy Pancake Recipe

This easy homemade pancake recipe proves that you can prepare your favorite food that tastes even better than the boxed one. I love homemade pancakes and I often make them for breakfast, dinner or just as a snack.

I added sugar to my pancakes, but if you want to make them more healthy, you can omit sugar. It will obviously be less sweet but it still tastes great. Once the pancake batter is in the pan, dot the surface of the pancakes with raspberries, blueberries, chocolate chips or sliced banana. It is a great way to get some fruits in your diet.

Ingredients:

  • 1 1/2 cups flour
  • 1 egg
  • 1 1/2 cups milk
  • 2 tablespoons sugar (optional)
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 - 3 tablespoons oil
  • 1 teaspoon Vanilla extract

How to make pancakes:
  1. In one bowl mix dry ingredients: flour, salt, baking powder and sugar. In a separate bowl mix eggs and milk, add Vanilla extract. Add dry mix to the wet mix and whisk until smooth. Don’t mix too long.
  2. Let the batter rest for 15 minutes.
  3. Heat a skillet on medium heat. Pour ¼ cup of batter into the frying pan. Cook on one side until the top begins to bubble, then flip over with spatula and cook for about 2 minutes or until golden brown.
  4. Serve warm and with desired syrup.

Tips:

Adding spices increases the aromatic quality of the homemade pancakes. I personally like to add some Cinnamon or Cardamom. If you want to try pancakes with new spices, start with ½ teaspoon. If you like it, add more.

If you want to freeze pancakes, cool and wrap them in aluminium foil or place them in a freezer bag. Store up to a month. To reheat, place them in a single layer on baking sheet and cover with foil. Heat pancakes for about 10 minutes at 350 degrees.
