Homemade Pancakes Recipe #5 - Cornmeal Cranberry Pancakes

Here I will present a recipe for one of the most delicious homemade pancakes ever. Cranberry and cornmeal are a combination that is not only delicious but also very nutritious. These ingredients give you the chance to stay fit and to eat food you like the most. These homemade pancakes should be served at every breakfast! Homemade cornmeal and cranberry pancakes are not too sweet, and small chopped cranberries enliven each bite with a sour tang that is softened by maple syrup.
Homemade Cornmeal and Cranberry pancakes are excellent idea when you want to prepare something different for your family. They are not too heavy, but thanks to baking powder, they are fluffy and soft. Cornmeal gives your homemade pancakes some crunch and different taste.
For these homemade pancakes, I prefer using milk instead of buttermilk. I am not sure why but I think those with milk have better taste. Of course, it is only my personal point of view and if you are against using milk when preparing your homemade pancakes, you can make them with buttermilk.
If you are cooking pancakes for the first time, remember about preparing them in a proper way. By this, I mean that it is good if you know some few basic rules. Do not over mix the batter. It should have some lumps remaining and it is advised that you leave the batter to rest for few minutes before cooking it. Here is the recipe for these excellent homemade cornmeal and Cranberry pancakes:
Ingredients:
  • 2 cups flour
  • 4 large eggs
  • 2 cups milk
  • 1 ½ teaspoons salt
  • 2 tablespoons sugar
  • ½ cup yellow cornmeal
  • 2 tablespoons baking powder
  • 10 tablespoons butter cut into chunks, plus more for greasing pan
  • 1 ¼ cups chopped fresh cranberries
How to make Cornmeal Cranberry Pancakes:
  1. Take a saucepan and heat in it butter and milk until the butter melts. Set it aside for about 15 minutes.
  2. Take a bowl, and beat eggs in it, then stir in the milk mixture and mix until combined.
  3. In a separate bowl, mix together cornmeal, flour, baking powder, sugar and salt.
  4. Pour the egg mixture into the flour mixture and mix. Remember not to over mix, the batter should have some lumps remaining.
  5. Set the batter aside to rest for 5 minutes if you can.
  6. Add cranberries to the batter before cooking.
  7. Heat a frying pan or a griddle over medium-high heat and grease it lightly with oil or butter, then pour about ¼ cup of batter onto the frying pan.
  8. Cook on one side until bubbles break on the surface or for about 2-3 minutes. Flip and cook again for about1 minutes, or until golden brown. Serve warm and topped with maple syrup.
